Lets say I just made a dovetailed box and have a little glue squeeze out on the inside corners.... Who would use a rabbit block plane to clean this up? Maybe a shoulder plane?
What is the main purpose for a rabbit or carriage makers planes?

Glue squeezeout inside a box? I use a chisel. The little crank necked ones from LV are nice for this. I don't use a plane for this because it will dig in to the wood. A chisel laid flat on the surface won't dig in, but it will peel the glue off.

What is the main purpose for a rabbit or carriage makers planes?

For cutting rabbets (not rabbits!). Offtimes they're also used to clean up joinery like tenons, but that's better done with a shoulder plane.

Actually for most tenons I prefer my rabbeting block to my shoulder planes. For glue on the inside of dovetails you'll also be planing perpendicular to the grain if you use a rabbeting plane (which is not ideal). I'd use a regular chisel (bevel-down), a crank neck chisel, or a chisel plane (which shouldn't dig into the wood if it's sharp, properly tuned and set up for a light cut).
