I have a cherry panel glue up about 3/4"x25"x19" that I left lying around too long before assembly and had cupped on me.
Any suggestions on how to remove the cup (short of ripping the panel into strips and planing down to make drawer sides)?

Randy it sounds like the panel was left sitting on a flat surface with only one side exposed to ambient air. In such a case, the exposed face will pick-up or loose moisture at a different rate than the protected face. If I am guessing correctly, then set the panel on strips of wood allowing good air circulation on both sides so the RH can equalize on both sides. This should flatten the panel with time. Always store glue-ups with air circulation to both faces to prevent cupping.

A quick way to flatten the panel is to lay it on your lawn on a sunny day with the concave side down. Watch it carefully; it can flatten again in less than an hour as it absorbs moisture from below and dries above. When it's flat do as Ron says.

Robs advice is right on. If this doesnt work you might take a wet or damp cloth and apply moisture to the cupped side , then allow air to all sides while drying.
