    Just took a fresh loaf of cast iron bread out of the ofen -- I don't know how long I can wait until I cut into it. LOL.

          Looks great, when I was a kid my grandmother used to make bread, she usually made 4 loaves plus one loaf of raisin bread. I don't recall the raisin bread ever getting cold.

            That looks great! Is it a white loaf or sourdough?
            I would have already cut into it. Oven glove on one hand and serrated knife in the other.

              It's not sour dough --it's made with a natural strong bread flour.

                Iím not sure what you mean by natural strong bread flour.
                I use store bought bags of bread flour, is that the same thing?

                  It's unbleached strong bread flour that is enriched with gluten and other things. I couldn't tell you what else. I get it from the wholesalers club here in 20 kg bags. I like the taste and texture of it -- it's not even close to a loaf of white bread. Your bread flour in the small bags will be similar but maybe lacking some things -- I really don't know.
